This weekend is shaping up to be loaded with lots of fun in the sun as we celebrate our Independence day once again… As you all furiously go about planning your holiday menus, here is a quick idea that you may want to consider, as it is a nice addition to the usual picnic and grilling suspects that we often find here in Hawaii.
Instead of serving a whole lot of shoyu marinated items, try this chicken skewer recipe that is marinated in some other goodies. The skewers will come out nice and juicy, and full of flavor, but will also be neutral enough to be served in chicken tacos, on Caesar salads, maybe with some Naan bread and yogurt sauce, or even with rice pilaf.
I also use the marinade on pork and whole chicken breasts and thighs… Come to think of it, use it on swordfish too.
2 boneless skinless chicken breasts or thighs cut into 1 inch cubes
1/3 cup olive oil
3 TBS red or white wine vinegar (not distilled vinegar)
1 TBS salt
¼ tsp pepper
1 tsp fresh garlic, chopped
3 TBS chopped fresh parsley
1 TBS Dijon Mustard
Combine all the ingredients and let marinate overnight. Make skewers and grill on medium high heat for about 5-6 minutes.
Note: While chicken is marinating, soak wooden skewers in water.
Try this and you’ll be a hero…Trust me… it Rocks!
