Thank you for your interest in joining Kanu Hawaii’s Eat Local Challenge! We at Foodland are proud to support their efforts to encourage everyone to eat local! I was excited to create an Eat Local menu  for the week with breakfast, lunch, and dinner menu items. You’ll also find supporting recipes  and a handy grocery shopping list  which you can take to Foodland when you purchase your ingredients for the week. Hopefully this will help you with the process.
First off all, it may seem a bit overwhelming to try to eat completely local for one week! But don't worry, have fun! You'll be amazed at what you find that is local when you really look.
When you look at the menu, you should note that not all of the ingredients are grown in Hawaii (it was quite challenging to create a 100% locally grown menu!). However, the main items for the meals are grown locally. Also, some of the menu items are local favorites that are easy to make, and therefore I didn't include recipes for those items because you probably have a favorite of your own. I did provide recipes for items that may be new to you.
I know that weekday mornings are sometimes tough to make a full meal, so the focus of those breakfasts is quick, fast, and easy. I also tried to put together items that are relatively healthy (actually, nearly all locally grown items are!). Since you may have more leisure time on the weekends, the breakfast meals are a bit more elaborate.
When it comes to lunch, I tried to put together items that can be made the night before and then packed and taken to work. Some of the lunch items are made from dinner leftovers. For example, chicken dinner can easily become Asian chicken salad the next day.
Keep in mind that all of this is meant to be ideas for you to get the creative juices flowing. Follow it, or take bits and pieces. Make your own revisions to the recipes. Most of all, have fun! And maybe eating local for a week can turn into a great habit!
