Bacon-Wrapped Filet Mignon

Juicy, tender and wrapped in bacon, what more could you ask for?

Ingredients  

  • 2 Premium Choice Certified Angus Beef® filet mignon, each about 1" thick
  • 2 bacon (do not use thick cut)
  • 2 tablespoons olive oil or butter
  • Kosher or sea salt and cracked black pepper to taste

Instructions 

  1. Preheat oven to 350˚F.
  2. Take one slice of bacon and wrap it around the width of one filet. Secure the ends of the bacon with a toothpick. Repeat with the other piece.
  3. Heat olive oil or butter over medium-high heat in a medium-sized oven-safe skillet. Season filets with sea salt and cracked black pepper; carefully add to hot oil, browning each side for 2 minutes.
  4. Transfer skillet to oven and roast in pan for 6-8 minutes (medium-rare to medium). Remove from oven; let stand 4-5 minutes. Be sure to pull toothpicks out of each filet before serving!

Notes

For added flavor, top filets with a tablespoon each of crumbled Gorgonzola or a pat of butter.
