Bleu Cheese Bacon Burger

3⁄4Cupbleu cheese crumbles
8Slicethick-cut, applewood-smoked bacon (or your favorite bacon), cooked
 eachSalt and freshly ground pepper to taste
4EachKaiser rolls, lightly toasted
4leafManoa Lettuce
8SliceVine-ripened Hamakua Tomato
4SliceMaui Onion
 eachDijon Mustard or Dijonaise
1 1⁄2Pound80/20 local ground beef


  1. Shape 4 patties with your hands, making them just larger than the diameter of the buns.
  2. Cover with plastic and set aside in refrigerator.
  3. Preheat grill to high.
  4. Season the patties with salt and pepper and place on hot grill.
  5. Cook for 3 minutes per side for medium doneness.
  6. Place hot on toasted Kaiser roll. (Spread mustard on ahead of time.)
  7. Layer with two slices of warm bacon, sprinkle with bleu cheese, then layer with lettuce, tomato and onion.


Serve with BBQ sauce or avocado on the side.
