3Tablespoonvegetable oil
1⁄2Poundchar siu or roast pork, thinly sliced
1⁄2Poundham, thinly sliced
1piece(s)thumb-sized piece ginger, minced
1⁄2Cupthinly sliced carrots
1⁄2Cupthinly sliced celery
2Cupbean sprouts
2Tablespoonoyster sauce
2stalkgreen onion, in 1-inch lengths
1Packagechow fun(n) noodles, cooked - 12 oz.


  1. Heat 1 tablespoon oil in a skillet or wok.
  2. Stir-fry meat with ginger until lightly browned. Add carrots, celery, onion; cook until half-done.
  3. Add bean sprouts stir lightly. Remove every thing from pan.
  4. Heat pan and add in 2 tablespoons vegetable oil.
  5. Add chow fun(n); cook 1 minute or until desired level of browning on edges of noodles is acheived.
  6. Toss in the meat and vegetable mixture. Taste and add more oyster sauce or soy sauce if desired.
  7. Garnish with green onion just before serving.
