Ingredients

1⁄4Cupolive oil
1⁄2Cupgarlic, coarsely chopped
1⁄2Cupfresh oregano leaves, coarsely chopped (roughly one fresh herb pack from store. Use leaves and all tender parts)
1Tablespoonsherry vinegar, balsamic vinegar or red wine vinegar
2eachlimes, juiced
1eachorange, juiced
1Tablespoonhoney
1Tablespoonsalt
2Teaspoonancho powder

Instructions

  1. Combine all ingredients in a mixing bowl.
  2. Mix until thoroughly combined in a mixing bowl.
  3. Marinate chicken for 6 hours or more.
  4. Prepare indirect grill and cook until done.
  5. Makes enough marinade for 2 lbs. of chicken.
