Grilled Miso Tofu

A delicious way to prepare tofu on the grill!

3⁄4Cupred miso
1Poundfirm tofu
 eachBamboo skewers, soaked in water
 eachtoasted sesame seeds
 eachslivered lemon rind
 eachchopped green onion


  1. Combine miso, sake, mirin, sugar, and dashi in a pot and cook over low heat. Stir slowly until smooth. Do not boil mixture. Reserve.
  2. Remove tofu from package and wrap in paper towels. Place on a plate, then place another plate on top to press out water.
  3. Turn tofu block length-wise and cut in half horizontally. Rotate each half 90 degrees and cut into ¾ inch slices. Insert two bamboo skewers into each slice so that they angle slightly.
  4. Grill on medium high heat for 2-3 minutes on each side. Be sure to clean the grates well and lightly oil them.
  5. After turning to the second side, spread the miso sauce on the already grilled side.
  6. Turn again and grill the miso sauce side for another minute.
  7. Top each with one of the garnishes. Serve with rice and assorted pickled vegetables.

Sorry for the confusion and delayed response. We recommend that you use 8 T of dashi soup base in liquid form. If you are using powdered dashi or "dashi-no-moto" be sure to dissolve it in the recommended amount of water, and then use 8 tablespoons of the resulting soup base.

What do you mean by 8 T dashi? The powdered dash or ???
