Hamakua Mushroom Bruschetta

Ingredients

Mushroom Mixture

4Tablespoonextra virgin olive oil
1eachlarge shallot, minced
2Clovegarlic, minced
1 1⁄2PoundHamakua mushrooms, chopped
2Tablespoonfresh parsley, minced
1Tablespoonfresh oregano, minced
 eachsalt and peper to taste

Bread

1loafsourdough bread
1⁄2Cupextra virgin olive oil
1Clovegarlic, peeled and sliced (large clove)

Instructions

Mushroom Mixture

  1. Heat a large skillet over medium high heat and add olive oil.
  2. Add shallots and garlic.
  3. Sauté 2-3 minutes, then stir in mushrooms and herbs.
  4. Cook, stirring gently until mushrooms are almost done (about 3-4 more minutes).
  5. Season with salt and pepper.

Bread

  1. Slice 6 slices of bread ½’’ thick, cut in half cross-wise.
  2. Toast bread over a hot grill or broiler.
  3. Brush with olive oil, then rub with garlic while still hot.
  4. Top with mushroom mixture and serve.
