Hamakua Tomatoes with Basil and Creamy Soy-Garlic Dressing

Ingredients

Dressing

1⁄2Cuplite mayonnaise
1⁄2Tablespoonshoyu
1Clovegarlic, chopped
1⁄4Teaspoonsesame oil
1Tablespoonmirin
1⁄2Teaspoonrice wine vinegar
1Tablespoonwater
1PinchSalt
1PinchBlack Pepper

Salad

2eachHamakua Springs vine-ripened tomatoes
1Pinchsalt and pepper to taste
1eachdrizzle of extra virgin olive oil as needed
5leaffresh basil, torn

Instructions

Dressing

  1. Combine dressing ingredients together and whisk until smooth.
  2. Reserve.

Salad

  1. Let the tomatoes come to room temperature.
  2. Slice them into 3/8’’ slices.
  3. Arrange them on a platter.
  4. Season with salt and pepper, and drizzle with olive oil.
  5. Sprinkle with the torn basil leaves.
  6. Drizzle with soy-garlic dressing.

Notes

Optional: Make it a “toy box” tomato salad by using varieties of colors and sizes of tomatoes.
