Kale and Pulled Huli Chicken Salad

Ingredients

Dressing

1⁄4Cupmayonnaise
1Tablespoondry mustard, hydrated with water into a paste
2Tablespoonshoyu
1Tablespoonlemon juice
1PinchSalt
1PinchBlack Pepper

Salad

1BunchMA‘O Farms Lacinato Kale, thick stems removed, washed
1⁄2CupJapanese cucumber, seeded and sliced on bias
1⁄4Cupcarrot, peeled and julienne
1⁄4Cupcelery, sliced on bias
1eachhuli chicken breast, skin removed and shredded
2Tablespoonsliced green onions
1⁄4CupHo Farms assorted tomatoes, halved
1Tablespoontoasted sesame seeds
1Tablespoondried cranberries

Instructions

  1. Combine all the ingredients for the dressing. Taste and adjust to your preference.
  2. For the salad, take the washed, destemmed kale leaves and slice them into thin strips. Place in a stainless salad bowl.
  3. Add in the cucumber, carrot, celery, chicken breast, and sesame seeds.
  4. Add in the dressing and lightly toss to coat and dress the salad.
  5. Place on 2 entrée plates or bowls. Sprinkle on the tomatoes, sesame seeds and dried cranberries.
