Ingredients

Hot Dogs

4eachHot Dogs
2Tablespoonlow-sodium soy sauce
1Teaspoonsugar
1Teaspoonlime juice
1eachsmall ripe Haas avocado
4eachhot dog buns

Kim Chee Slaw

1 1⁄2CupNapa cabbage, finely sliced
2Tablespoonred onion, finely sliced
1⁄2Cupkim chee, finely sliced
1Teaspoonkim chee juice
1⁄4Teaspoongarlic and sea salt
2Teaspoonrice wine vinegar
1⁄2Teaspoontoasted sesame oil
1Teaspoontoasted sesame seeds
1Tablespoonmayonnaise
1Teaspooncanola oil
2Tablespoonfinely sliced scallions

Garnish

4eachlime wedges
 eachsliced scallion curls

Instructions

Hot Dogs

  1. Heat a sauté pan on medium high heat. Add in the hot dogs and slowly cook for 2 minutes to caramelize and heat through.
  2. Add in the soy sauce, sugar and lime juice and allow to reduce and glaze the sausage.
  3. Thinly slice avocado and reserve for topping.

Kim Chee Slaw

  1. Combine all the ingredients and reserve in the refrigerator.

To Serve

  1. Open the hot dog buns and place one hot dog in each. Carefully arrange the avocado slices on each of the hot dogs.
  2. Garnish each dog with kim chee slaw and a few scallion curls. Place on 4 plates. Finish each plate with a lime wedge. Serve immediately.
