Mango Mac Nut Bread

Just in time for mango season, Chef Keoni Chang shares this delicious recipe for ono Mango Mac Nut bread!

Servings 2 loafs

Ingredients  

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon Baking Powder
  • 2 teaspoons cinnamon
  • 3 eggs, well beaten
  • 1 cup canola oil
  • 1 teaspoon lemon juice
  • 0.25 cup milk
  • 1 cup Granulated Sugar
  • 0.5 cup dark brown sugar
  • 2 cups peeled and diced fresh very ripe mango
  • 2 teaspoons fresh grated ginger
  • 0.5 cup Macadamia nuts, chopped

Instructions 

  1. Preheat oven to 400°F.
  2. Grease two 9x5 inch loaf pans.
  3. Sift the flour, baking soda, baking powder and cinnamon into a small bowl.
  4. In a large mixing bowl, combine eggs, oil, lemon juice, milk and sugars and mix with dry ingredients until well blended. It is okay to have tiny lumps. Do not over mix or the bread will be tough.
  5. Fold in mango, ginger, and nuts.
  6. Pour into loaf pans and bake for 20 minutes. Lower the temperature to 350 degrees and bake for 20 minutes. Check doneness with a toothpick. The bread is done when the toothpick comes out clean.
  7. Let cool 10 to 15 minutes, unmold and let completely cool on baking racks.
