Oven Roasted Mushrooms

Ingredients

6Ounceassorted mushrooms, trimmed and cut into 1" pieces
4Tablespoonextra virgin olive oil
2Clovegarlic, chopped
1⁄2Teaspoonfresh thyme, chopped
1Pinchsalt & pepper, to taste
1eachlemon wedge

Instructions

  1. Turn oven on to broil.
  2. Place oven rack to the highest position that is closest to the broiler.
  3. Toss cleaned mushrooms with the oil, garlic, thyme, and a pinch of salt and pepper.
  4. Place in a 9’’ x 13’’ baking pan.
  5. Open the oven and place the pan on the rack, positioning the pan directly under the broiler element.
  6. Leave the oven ajar. (This will ensure that the broiler element stays hot.)
  7. Roast the mushrooms for 6 minutes.
  8. Remove and reserve.
  9. Before serving, sprinkle with the lemon juice.

Notes

Optional: Garnish with grated parmesan.
