Peanut Butter Cookies

Perfect anytime, anywhere!

Ingredients  

  • 12 ounces organic butter
  • 1 cup organic brown sugar (firmly packed)
  • 1 cup organic granulated sugar
  • 1 teaspoon organic salt
  • 0.666667 organic peanut butter (16 oz. jar)
  • 4 organic eggs
  • 3.5 cups organic whole wheat flour
  • 1 teaspoon baking soda

Instructions 

  1. Cream together the butter, brown sugar, granulated sugar, salt and peanut butter in a mixing bowl with a paddle attachment until smooth and creamy.
  2. Add in eggs one at a time mixing on low until incorporated.
  3. Sift together the flour and baking soda then add into butter mixture.
  4. You may add in nuts, dried fruit and/or chocolate chips at this time.
  5. Mix until just incorporated.
  6. Scoop into desired shape and place onto a cookie sheet lined with wax or parchment paper.
  7. Bake in a preheated oven at 320° for about 10-15 minutes.
  8. Check after 10 minutes and turn cookie sheet around.
  9. Continue baking until golden brown.
  10. Remove from the oven and carefully move wax paper onto a cooling rack.
  11. Cool for 30 minutes.
  12. When completely cool, place into an air tight container or you may freeze for 1 month.
  13. This cookie dough can be frozen raw for up to 3 months and defrosted as needed.
