Pipikaula Fried Rice

Ingredients

1⁄4Cuppeanut oil
3Cupcooked white rice, day old, dried out uncovered in the fridge
1⁄2Cupgreen onions, chopped
1⁄2Cuppipikaula, diced
1⁄2Cupbay shrimp
1⁄2Cuplup cheong, portuguese sausage or chorizo, diced
1Cuppeas
2Teaspoongarlic, minced
3eacheggs
1 1⁄2Teaspoonsoy sauce, dark preferred
2Tablespoonsesame oil
 Eachsalt and pepper, to taste

Instructions

  1. Heat the oil in the wok.
  2. Toss in the rice until hot and golden.
  3. Toss in the green onions, pipikaula, shrimp and sausage.
  4. Stir in the peas, garlic, eggs, soy sauce and sesame oil.
  5. Stir-fry for 2 minutes.
  6. Season with salt and pepper.
