Pumpkin Spice Cookies

Great and different way to bake with pumpkin

Ingredients  

  • Cookies
  • 2.5 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground clove
  • 0.5 teaspoon salt
  • 0.5 cup butter
  • 0.5 cup granulated sugar
  • 1 cup pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract
  • Frosting
  • 2 cups powdered sugar
  • 3 tablespoons milk
  • 1 tablespoon melted butter
  • 1 teaspoon vanilla extract

Instructions 

Cookies
  1. Preheat oven to 350°.
  2. Combine flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt and set aside.
  3. Cream the butter and granulated sugar together until light and fluffy.
  4. Add in the pumpkin, egg, and 1 teaspoon of vanilla extract and mix until well blended.
  5. Add in the dry ingredients and mix until combined.
  6. Drop cookies onto a cookie sheet and flatten slightly.
  7. Bake for 15-20 minutes.
  8. Cool completely.
Frosting
  1. Mix the powdered sugar, milk, melted butter and vanilla extract together until completely blended.
  2. You may need to add more milk to reach a spreadable consistency.
  3. Dip cookies into the frosting or drizzle with a fork.
  4. Allow the cookies to set out for about 30 minutes to let the frosting harden.
  5. Then store in an airtight container up to one week.

Notes

For extra crunchy cookies you can add two eggs instead of one and add 10 minutes to the total cooking time.
