Roy's Fried Garlic Marinade for Shrimp

Ingredients

1⁄2Cupfish sauce
1⁄4Cupbrown sugar
4eachlimes, juiced
4eachlemons, juiced
2eachoranges, zested and juiced
10eachbasil leaves, julienne
1⁄4Cupcilantro, chopped
1stalklemongrass, white part only, minced
3eachkaffer lime leaves, crushed
2Tablespoonsambal chili sauce
1⁄4Cuppeanut oil
10eachgarlic cloves, finely minced
2eachshallots, sliced

Instructions

  1. Using a bowl add together the first 10 items and allow the sugar to dissolve about 5 minutes.
  2. Set aside.
  3. In a sauce pan heat the peanut oil.
  4. Fry the minced garlic and shallow in the peanut oil until golden brown and quickly add to your bowl of reserved ingredients.
  5. Refrigerate marinade for 2 hours before adding in shrimp.
  6. Allow shrimp to sit in marinade for 30 minutes before grilling.
