Roy's Hawaii Kai Meatloaf

You've never tasted meatloaf like this!

Ingredients  

  • Meatloaf
  • 6 Eggs
  • 10 button mushrooms, finely diced
  • 0.5 cup red bell peppers, finely diced
  • 0.5 cup green bell pepper, finely diced
  • 4 celery, finely diced
  • 0.5 onion, finely diced
  • 2 tablespoons ketchup
  • 1.5 tablespoons Salt
  • 1 tablespoon pepper
  • 2.5 pounds ground lean beef
  • 0.75 cup panko
  • Mushroom Sauce
  • 8 shiitake mushrooms, sliced
  • 12 button mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 2 cups demi glace
  • 0.333333 cup heavy cream
  • 1 tablespoon basil, chopped
  • salt and pepper, to taste

Instructions 

Meatloaf
  1. Preheat oven to 350°.
  2. Baking time approximately 30-40 minutes.
  3. Beat eggs in large mixing bowl.
  4. Add diced vegetables, ketchup, salt and pepper.
  5. Add ground beef and mix thoroughly.
  6. Incorporate panko until mixture becomes firm enough to hold shape.
  7. Shape mix into a nice rectangle shape and place on an oiled sheet pan to bake.
  8. A greased loaf pan may be used but will require extra cooking time, about 15 minutes.
  9. Serve with Mushroom Sauce.
  10. Note: You can freeze meatloaf after baking to serve at a later time.
  11. Cool completely, wrap meatloaf with plastic wrap and then with foil tightly before freezing.
  12. To re-heat, thaw out meatloaf.
  13. Slice to desired thickness.
  14. Lightly oil an outdoor grill or griddle top and grill slices of meatloaf before eating.
Mushroom Sauce
  1. Sauté mushrooms with olive oil and garlic.
  2. Add demi glace and cream.
  3. Reduce until thick, about 4 minutes.
  4. Add basil and salt and pepper to taste.
  5. Serve with meatloaf.
