Salt & Pepper Shrimp

Ingredients  

  • 1 pound large shrimp, shells on
  • vegetable oil for deep frying
  • 4 egg whites
  • 1 cup potato starch
  • 1 tablespoon garlic salt
  • 2 tablespoons Black Pepper
  • 1 teaspoon kosher salt
  • 0.25 teaspoon Chinese-five spice powder

Instructions 

  1. Slice each shrimp along the back with scissors or a sharp knife, leaving the tail segment intact.
  2. Devein shrimp, leaving shells on. Trim off legs. Rinse shrimp and dry.
  3. Preheat oil in a pan to 400°.
  4. Place egg whites in a bowl and beat slightly.
  5. In a separate bowl, combine potato starch, garlic salt, black pepper, kosher salt and Chinese-five spice powder and mix well; reserve.
  6. Add shrimp to the egg whites and stir to coat.
  7. Place shrimp in a colander and drain excess egg whites.
  8. Toss drained shrimp with seasonings.
  9. Place shrimp 3-5 pieces at a time in hot oil and fry for 30-45 seconds.
  10. Remove from oil and drain on paper towels.
  11. Serve hot with a spicy chili oil or hoisin sauce.
