Seared Ahi Nicoise Salad

4OunceFresh Ahi, seasoned and seared 1 minute on each side
2eachHeads Manoa lettuce, cleaned with core removed
1eachWhite or red potato, blanched fork tender and sliced
1eachRoma tomato sliced, or 6 grape tomatoes halved
1eachProperly boiled egg, chopped
2TablespoonOf your favorite olives (classically nicoise, not California olives) chopped
1⁄4CupGreen beans, properly blanched and sliced
1PinchThinly sliced red onion
4TablespoonRed wine vinaigrette
1TablespoonAvocado relish
1PinchGrated parmesan cheese, to taste

Avocado relish

1Teaspoongarlic, chopped
1TeaspoonMinced onion
1⁄2TeaspoonJalapeno flesh, minced
1⁄4Teaspoonlime juice
1Dasholive oil
1eachsalt and pepper, to taste
1eachdiced avocado


For Seared Ahi Nicoise Salad and Avocado Relishd

  1. Toss the Manoa lettuce with half of the vinaigrette dressing.
  2. Line it neatly on a plate.
  3. Lay the potatoes neatly around the lettuce.
  4. Sprinkle the tomatoes, egg, olives, green beans and onion around the lettuce near rim of the plate.
  5. Slice the seared ahi neatly on a bias and place it on top of the lettuce.
  6. Finish with a nice dollop of the avocado relish, a sprinkle of grated parmesan, and a drizzle of the last 2 Tbsp. of vinaigrette dressing.
