Shrimp Dynamite Stixs

A fun and delicious way to do shrimp!

Ingredients  

  • 24 large shrimp, peeled and butterflied leaving the tail intact
  • 6 ounces crab meat, cleaned and squeezed dry
  • 1 teaspoon mayonaise
  • 0.5 teaspoon Coleman's mustard powder
  • 0.25 teaspoon togarashi pepper spice
  • 0.25 teaspoon Salt
  • 4 ounces smoked salmon
  • Wasabi Dynamite
  • 0.5 cup mayonaise
  • 2 tablespoons wasabi paste
  • 0.5 teaspoon wasabi oil

Instructions 

Dynamite Shrimp Stix

  1. Skewer shrimp starting at the tail side so that the shrimp remains flat.
  2. Poach the shrimp in seasoned water for 2 minutes and stop the cooking by submerging in ice water.
  3. Dry the shrimp thoroughly.
  4. Mix crab, mayonnaise, mustard, togarashi and salt; reserve on the side.
  5. For Wasabi Dynamite, mix mayonnaise, wasabi paste and wasabi oil; reserve.
  6. Wrap the shrimp with a strip of thinly sliced smoked salmon.
  7. Place a ½ teaspoon of the crab mixture on the shrimp.
  8. Dollop a small amount of the dynamite on the crab mixture to cover.
  9. Before serving, place shrimp on a sheet pan and broil until dynamite turns golden brown.
  10. Garnish each shrimp individually with tobiko, mint or chiso leaves.
