Simple Buffalo Chicken Skewers with Blue Cheese Dressing

Blue Cheese Dressing

1⁄4Cupsour cream
1Teaspoonlemon juice
1Dashworchestershire sauce
2Ounceblue cheese crumbles (about 1/2 cup)


2Poundchicken breast tenders
2Tablespoonvegetable oil
4Tablespoonhot sauce such as Frank's or Goya
1 1⁄2Tablespooncider vinegar
2Packagebamboo skewers


  1. Cut celery into thin sticks.
  2. Soak celery in a bowl of ice and cold water at least 30 minutes and up to 1 hour.


  1. In a bowl whisk together mayonnaise, sour cream, lemon juice, worchestershire sauce and stir in blue cheese (dressing will not be smooth).
  2. Dressing may be made 8 hours ahead chilled and covered.


  1. Marinate the chicken tenders with the oil, hot sauce and vinegar for at least 8 hours or overnight.
  2. Soak bamboo skewers in water.
  3. When the strips are done marinating, skewer them for grilling.
  4. Preheat grill.
  5. Grill chicken tenders on an oiled rack set 5-6" over glowing coals until cooked through and golden brown, 2 minutes on each side.
  6. Serve chicken tenders warm or at room temperature with dressing and celery sticks, and Tabasco or hot sauce on the side.

It seems that no one will ever forget this recipe because of its original way of serving. Most of us are very sensitive about the appearance on what is served on the table just like what I prefer. I want those menu that are not messy and good to my dietary habits. So, this is very perfect for me. I hope I could take out payday loan just to taste my favorite menu.
