Spinach Salad

2bagbaby spinach leaves, 6 oz.
3⁄4Cuptoasted almonds, blanched and slivered
1Cupdried cranberries
1⁄4Cupfinely sliced red onion
2eachoranges, peeled and segmented
1eachripe avocado, peeled and sliced
1CupDijon red wine vinaigrette

Dijon red wine vinaigrette

1⁄8Cuplight brown sugar
1TeaspoonSalt
1⁄2Teaspoonpepper
2Teaspoondijon mustard
1⁄4Cupred wine vinegar
1⁄2Cupolive oil

Instructions

Dijon Red Wine Vinaigrette

  1. In a medium bowl, whisk together all the ingredients for the vinaigrette.

Spinach Salad

  1. In a large bowl, add the spinach and toss with the dressing.
  2. Place the salad into a serving bowl.
  3. Garnish the salad with the almonds, cranberries, red onion, oranges and avocado.
