Watermelon Granita

A perfect treat for a hot summer day

Ingredients  

  • 0.5 cup water
  • 0.666667 cup sugar
  • 2 lime
  • 6 cups watermelon, cubed

Instructions 

  1. Combine the water and sugar together in a small sauce pan and bring to a boil for about 1 minute.
  2. Remove from the heat and let cool.
  3. Shave off the rind of one lime using a micro plane grater and set aside.
  4. Juice the 2 limes and set aside.
  5. Remove the seeds from the watermelon and puree it in a blender or food processor.
  6. Add in the sugar mixture, lime juice and rind and blend until just combined.
  7. The mixture should be sweet and a bit tangy from the lime juice.
  8. Add more lime juice to taste.
  9. Pour watermelon mixture into a shallow metal pan and place on a flat surface in the freezer.
  10. Freeze for 2 hours then stir the mixture with a fork to fluff the ice.
  11. Repeat every hour until mixture is light and flaky.
  12. Serve in a glass goblet with a slice of lime or watermelon.
  13. To kick it up, you can drizzle with flavored vodka.
