Bacon-Wrapped Filet Mignon

2piece(s)Premium Choice Certified Angus Beef® filet mignon, each about 1" thick
2piece(s)bacon (do not use thick cut)
2Tablespoonolive oil or butter
 EachKosher or sea salt and cracked black pepper to taste


  1. Preheat oven to 350˚F.
  2. Take one slice of bacon and wrap it around the width of one filet. Secure the ends of the bacon with a tooth pick. Repeat with the other piece.
  3. Heat olive oil or butter over medium-high heat in a medium-sized oven-safe skillet. Season filets with sea salt and cracked black pepper; carefully add to hot oil, browning each side for 2 minutes.
  4. Transfer skillet to oven and roast in pan for 6-8 minutes (medium-rare to medium). Remove from oven; let stand 4-5 minutes. Be sure to pull toothpicks out of each filet before serving!


For added flavor, top filets with a tablespoon each of crumbled Gorgonzola or a pat of butter.
