Bacon-Wrapped Filet Mignon
Juicy, tender and wrapped in bacon, what more could you ask for?
|2||piece(s)||Premium Choice Certified Angus Beef® filet mignon, each about 1" thick|
|2||piece(s)||bacon (do not use thick cut)|
|2||Tablespoon||olive oil or butter|
|Each||Kosher or sea salt and cracked black pepper to taste|
- Preheat oven to 350˚F.
- Take one slice of bacon and wrap it around the width of one filet. Secure the ends of the bacon with a tooth pick. Repeat with the other piece.
- Heat olive oil or butter over medium-high heat in a medium-sized oven-safe skillet. Season filets with sea salt and cracked black pepper; carefully add to hot oil, browning each side for 2 minutes.
- Transfer skillet to oven and roast in pan for 6-8 minutes (medium-rare to medium). Remove from oven; let stand 4-5 minutes. Be sure to pull toothpicks out of each filet before serving!
For added flavor, top filets with a tablespoon each of crumbled Gorgonzola or a pat of butter.
