Easy Maakouda

Ingredients  

  • 5 Potatoes
  • 2 Eggs
  • 0.5 onion
  • handful of italian parsley(to taste)
  • leftover meat(omit to make this a vegetarian dish)
  • salt and pepper(to taste)
  • olive oil(for frying)
  • optional: shredded cheese of choice

Instructions 

  1. Boil and mash potatoes.
  2. Chop leftover meat, onion and parsley
  3. Mix all ingredients together. Optional: add cheese.
  4. Add salt and pepper to taste.
  5. Form patties with the mixture.
  6. Heat olive oil in a pan.
  7. Fry patties until brown.
  8. Serve with a fresh side salad.

Notes

 Leftovers are delicious as a brunch item with avocado, an over easy egg and sauerkraut.
