Grilled Tandoori Style Chicken

Our version of an Indian favorite!

Ingredients  

  • 2 cups plain whole-milk yogurt
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons fresh ginger, peeled, minced
  • 4 garlic cloves, minced
  • 2 teaspoons Salt
  • 1 1/2 teaspoons ground coriander
  • 1 1/2 teaspoons ground turmeric
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon Cayenne Pepper
  • 8 skinless chicken leg-thigh pieces
  • 3 tablespoons butter, melted
  • 1 small red onion, thinly sliced crosswise, separated into rings
  • 0.25 cup fresh cilantro, chopped

Instructions 

  1. Blend 1 cup yogurt and the next 9 ingredients listed above in a processor until smooth.
  2. Transfer to a large bowl.
  3. Mix in remaining 1 cup of yogurt.
  4. Add chicken and mix to thoroughly coat chicken with marinade.
  5. Cover and refrigerate overnight.
  6. Prepare barbecue (medium-high heat).
  7. Clean the grates well and oil them.
  8. Mix chicken to ensure it is coated well with marinade.
  9. Place marinated chicken on barbecue.
  10. Grill chicken until just cooked though, about 12 minutes per side.
  11. During the last 2 minutes of cooking, occasionally baste chicken with butter.
  12. Transfer chicken to platter.
  13. Top with onion and cilantro and serve.

Notes

This recipe adapts traditional cooking for a barbecue. The chicken needs to marinate overnight, so start this one day ahead.
