Instant Pot Kalua Pig & Cabbage

Ingredients  

  • 3 pounds pork butt (cut into 2-inch cubes)
  • 1 cup water
  • 1 tablespoon coarse red Hawaiian salt
  • 1 tablespoon liquid smoke
  • 1 head green cabbage (3-pound average, sliced into 1-inch strips)
  • Lomi Tomato (optional garnish)

Instructions 

  1. In a mixing bowl, add cubed pork butt, red Hawaiian salt and liquid smoke. Mix and marinate for 30 minutes.
  2. In Instant Pot, add water and trivet. Then, add pork in a flat layer.
  3. Pressure cook on high for 75 minutes. Release pressure.
  4. Remove pork from Instant Pot, add to a bowl and shred with two forks. Taste and season with more Hawaiian salt if necessary.
  5. Add cabbage in Instant Pot on trivet (leave in liquid from cooking pork). Cook for 1 minute on high pressure, release pressure immediately.
  6. In a pan, combine pork and cooked cabbage, stir and heat as desired.
  7. Transfer to a serving bowl, garnish with lomi tomato and serve.

Notes

Make more kalua pig (don’t mix in cabbage) and use it in kalua pig tacos, omelets, quesadillas or fried rice!
