Li Hing Cranberry Relish

Chef Brian prepares his favorite Cranberry Relish recipe that is perfect for Thanksgiving. Made with fresh cranberries, pineapple and li hing for a local twist. 
Servings 8 Servings

Ingredients  

  • 4 cups Fresh Cranberries
  • 2 cups fresh pineapple, peeled, cored, and cut into 1 inch pieces
  • 1 cup orange juice
  • 2 cups Brown Sugar
  • 1 cup water
  • 1 tablespoon Li Hing Powder
  • 4 Pieces star anise
  • 1 package Seedless Li Hing Cherries, chopped

Instructions 

  1. In a pot, combine cranberries, fresh pineapple pieces, water, juice, sugar, and anise. Bring to a boil and reduce to a simmer for about 30 minutes.
  2. When sauce is slightly thickened, turn off heat and add li hing powder, and seedless li hing cherries, and mix well.
  3. Remove the 4 star anise and place in refrigerator to chill.

Notes

Sauce can be made up to 5 days in advance.
