Thai Noodle Salad

12OunceSpaghettini or Capellini noodles
3Tablespoonsesame oil
1Tablespoonvegetable oil
1Tablespoonginger, peeled and chopped
5Clovegarlic, chopped
1Cupcreamy peanut butter
1Cupsoy sauce
3Tablespoonrice wine vinegar, unseasoned
1 1⁄2Tablespoonchili-garlic sauce
1⁄2Cupgreen onions, sliced
2Tablespooncilantro, chopped
2Cupbean sprouts, blanched
1Cupcarrots, shredded
1Cuppeanuts, toasted, chopped


  1. Cook pasta in large amount of boiling seasoned water.
  2. When tender, but still firm, drain and toss with sesame oil.
  3. In a sauté pan, heat the vegetable oil to medium high heat and sweat the ginger and garlic.
  4. Add honey, peanut butter, soy sauce, rice wine vinegar, and chili-garlic sauce.
  5. Whisk to blend in and simmer for 1 minute.
  6. Cool to room temperature.
  7. Pour over pasta and toss in green onions, cilantro, bean sprouts, carrots, and peanuts.
